Umeboshi, which translates to Japanese salted plums or pickled plums, are pickled ume fruit (also known as Japanese apricot) that are often eaten as a side dish to rice or in rice balls. The ume fruit itself is naturally sour, and pickling it increases its saltiness, but it still remains popular in Japanese cuisine for its antiseptic effects.

The red coloration of umeboshi comes from akajiso, the red shiso leaf related to the standard green plant used as a garnish in sushi and other dishes.
