Tofu skin is an Asian dish made from soybeans. When one boils soy milk in a pan, a film composed of soy protein-lipid complex forms on the surface. The film is then collected and dried into yellowish sheets known by most as yuba (Japanese translation).
Ironically, the term "tofu skin" is rarely ever used.
